THE FIRST COMPANY IN ITALY TO PRODUCE RAW CHOCOLATE

RAW COCOA is a new way of producing and enjoying chocolate. It is the search for pleasure and production methods which, compared to traditional processes, best preserve the precious qualities of the cocoa and the other ingredients used.

Cacao Crudo is the first company in Italy to produce raw chocolate. It was born from an idea by Daniele Dell'Orco, anthropologist, researcher, specialized in the food sector and in situ conservation and enhancement of agricultural and wild biodiversity.

Daniele, during multiple trips and studies abroad, learned about the health benefits of raw chocolate, returned to Italy and decided to dedicate himself to its production, however adding something that in his opinion was missing from most of the raw chocolate he had tasted up until then: attention for the finest taste.

Thus begins the new challenge of producing chocolate that is both healthy and gourmet at the same time, organic, made with high-quality raw materials and sourced through a more transparent and fair supply chain. In short, a project born from a very broad, ethical and sustainable vision around food.

After about two years of research on the best production methods to better preserve the precious nutritional qualities of cocoa intact and on the quality of the ingredients, the Raw Cocoa laboratory was founded in 2013 a few steps from the city of Rome.

It immediately becomes clear that Cacao Crudo is a new way of producing and enjoying chocolate. Thus, exclusively high-quality single-origin cocoa from Peru is used, the Criollo variety, the most valuable in the world and representing less than 1% of global cocoa production. This has always found its natural habitat in the Central American area which includes the Amazon forest.

This is how Cacao Crudo was born, a project that is good for the environment, for small and medium-sized well-paid farmers and clearly for our palate and happiness.
